Mexican Lasagna

Ingredients:
1 lb ground beef
1 packet taco seasoning
1 can Fiesta Nacho Cheese soup
1 cup salsa
1 cup shredded cheddar cheese
8 8" flour tortillas - cut into 2" x 2" squares
1/2 cup water
Optional Ingredient:  (add one or all)
sauteed onion
1/2 cup frozen corn
1/2 cup drained & rinsed black beans

Cook beef with taco seasoning packet & onion
Add soup, salsa, water, tortillas, beans & corn and 1/2 cup cheese
Mix well

 Spoon mixture into shallow baking dish

Bake at 400 degrees for 30 minutes
Sprinkle with remaining cheese

Best Ranch Chicken EVER!!!

If you have not tried any of my recipes before - try this one, you will not be disappointed. It is fast, easy & delicious!

Ingredients:
4-6 chicken breasts (I used boneless & skinless)
1/2 cup Ranch salad dressing (Hidden Valley Ranch or Kraft works well)
1 cup Italian bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon cracked black pepper
1 teaspoon sage
1/2 teaspoon salt
1/2 teaspoon garlic powder

Directions:
Lightly sprinkle the garlic powder on the chicken breasts before marinating.
Marinate the chicken in the ranch dressing overnight (or for at least 4 hours).
Preheat the oven to 450 degrees F
Combine the bread crumbs, cheese, and remaining spices - mix well.
Coat the marinated breasts in the breading mixture and place in a 9x13 baking dish. Bake for 20 minutes, then REDUCE HEAT to 350 degrees F and bake for an additional 30 minutes.

Italian Pork Chops & Parmesan Oven Fries

Oven Fries
Ingredients:
2 russet potatoes, cut in 1/2 lengthwise, halves cut lengthwise into fourths to make 16 big, fat wedges
1/4 cup extra-virgin Olive Oil

Salt (we used Sea salt)
2 tablespoons chopped parsley leaves
1/4 cup freshly grated Parmesan Cheese


Directions:
Preheat the oven to 425 degrees F.
Preheat a baking sheet in the hot oven for at least 5 minutes.
While the baking sheet is heating, toss the potatoes with the olive oil and 3/4 teaspoon salt in a large bowl. Then dump the potatoes out onto a baking sheet, spreading to a single layer. Roast for 30 to 35 minutes, shaking the pan every now and then, until the potatoes are cooked through, brown and crispy. Toss the fries in a big bowl with the parsley and cheese.


Italian Pork Chops
Ingredients:
1 cup Italian bread crumbs
1 cup plain bread crumbs
2 cups grated Parmesan cheese
1 tablespoon Italian-style seasoning
1/4 teaspoon garlic powder
1 cup Italian salad dressing
6 pork chops

Directions:
Preheat oven to 425 degrees
In a medium bowl, combine the bread crumbs, Parmesan cheese, Italian-style seasoning and garlic powder and mix together well.
Dip the chops in the Italian salad dressing and then dredge each chop in the bread crumb mixture, coating all sides thoroughly. Place the chops in a 9x13 inch baking dish.
Bake at 425 degrees for 30 to 40 minutes, or until internal pork temperature reaches 160 degrees.
These are perfect to make together, the oven temp is the same & the cook time is similar. Just a little side salad & you dinner is ready to go.

7-Up Chicken - my version



7-up Chicken - this is a combination of a few recipes I've found on-line.

In slow cooker place:
4-6 boneless/skinless frozen chicken breasts
1 chopped onion
1/2 lb bacon - fried & crumbled
2 T butter
1 tsp seasoning salt
1 tsp parsely flakes
2 shakes garlic salt
1 can 7-up or sprite.

cook on low for 6-8 hours

About 1/2 way we added:
1 bag carrots
4-5 potatoes - diced into 1" cubes

burger & salsa recipe

Burgers:
1 lb hamburger
1 packet dry ranch dressing
1/2 c shreaded cheddar cheese
1/2 c bacon bits
1/4 c chopped onion

Salsa:
1 mango diced
1 avacado diced
4 Roma tomatoes diced
1 jalapeno minced
1/2 c chopped cilantro
3 cloved minced garlic
1 t salt
2 T lime juice
1/2 c chopped red onion
3 T olive oil
