Easy Chicken Lo Mein


Ingredients:
1/2 lb. spaghetti, uncooked
1/4 cup Asian Toasted Sesame Dressing (KRAFT)
1 lb. boneless skinless chicken breasts, cut into strips
2 T Minced garlic
1/2 red Pepper - chopped
1/2 green Pepper chopped
1 small onion Chopped
1/2 cup chicken broth
1 Tbsp. creamy peanut butter
1/4 cup soy sauce
2 Tbsp. chopped cilantro - or use the stuff in the tube.
2 Tbsp. chopped P\peanuts


COOK spaghetti in large saucepan as directed on package.

Heat dressing in large nonstick pan on medium-high heat. Add chicken and garlic; cook for 3-5 min. or until chicken is no longer pink. Add vegetables, broth and peanut butter; cook another 3 to 5 min. or until chicken is done.

Drain spaghetti; return to pan. Add chicken mixture and soy sauce; mix lightly. Spoon onto platter; top with cilantro and nuts.

Zucchini Pasta


1 lb lean ground beef
1/2 medium onion chopped
Garlic, oregano, Italian seasoning
1 can beef broth
1 can diced tomatoes - Italian style
2 cups uncooked pasta
2 cups sliced zucchini (fresh from the garden if available)
1 cup grated Parmesan cheese

1) In large skillet brown the beef & onion with seasonings (to taste), pour off drippings, put beef in separate bowl
2) In same skillet, add broth, tomatoes and pasta, bring to boil, reduce heat
3) cook uncovered for 15 minutes stirring frequently, add zucchini and cook for an additional 5 -10 minutes (until pasta is tender)
4) add beef & still in 1/2 C cheese cook for another 5-10 minutes
5) serve with remaining cheese sprinkled on top.
